Method

  1. 1Heat oil in a large pan. Soften onion over medium heat for 8 minutes. Add garlic and ginger, cook 2 more minutes.
  2. 2Add carrots and stock. Bring to a boil, reduce heat and simmer 20-25 minutes until carrots are completely soft.
  3. 3Blend until smooth. Season generously with salt, pepper and lemon juice.
  4. 4Serve with a drizzle of good oil and a pinch of chilli if you like.
