Roasted Tomato Soup

Method

  1. 1Preheat oven to 200°C / 400°F.
  2. 2Place tomatoes cut-side up on a large baking tray. Add garlic and onion. Drizzle generously with oil, season with salt and a little sugar.
  3. 3Roast 45 minutes until caramelised and slightly charred at the edges.
  4. 4Squeeze garlic from skins. Transfer everything to a blender with the stock and basil.
  5. 5Blend until smooth. Taste and season. Reheat gently to serve.
