Garden Herb Omelette

A proper French omelette with chives, basil and a few cherry tomatoes. The simplest possible breakfast with garden ingredients.

Method

  1. 1Beat eggs well with a fork. Season with salt.
  2. 2Heat butter in a non-stick pan over medium-high heat until foaming.
  3. 3Add eggs. Stir gently with a spatula for 30 seconds, then leave to set at the edges.
  4. 4Scatter chives and basil over half the omelette. Add tomatoes.
  5. 5Fold in half and slide onto a plate. Should still be slightly soft in the centre.
