Grilled Corn with Herb Compound Butter

Corn grilled in the husk, then stripped back and slathered with herb compound butter. Summer at its simplest.

Method

  1. 1Mix butter with chives, rosemary, garlic and salt.
  2. 2Soak corn in husks in cold water for 10 minutes.
  3. 3Grill over medium-high heat for 15-20 minutes, turning every 5 minutes. The outer husks will char — that is correct.
  4. 4Pull back the husks and char the bare corn directly over the flame for 2-3 minutes.
  5. 5Slather immediately with herb butter and serve.
