Herb Butter Grilled Chicken

Chicken thighs rubbed with a compound butter of rosemary, thyme, garlic and chives, grilled until crispy-skinned.

Method

  1. 1Mix butter with herbs, garlic, salt and lemon zest until fully combined.
  2. 2Push the herb butter under the skin of each thigh. Rub any excess over the top.
  3. 3Grill over medium-high heat, skin side down, for 12-15 minutes. Flip and cook a further 10-15 minutes until cooked through.
  4. 4Rest 5 minutes before serving.
