Courgette & Herb Bread

A moist, herb-flecked savoury bread that uses up a serious quantity of courgettes and is better the next day.

Method

  1. 1Preheat oven to 180°C / 350°F. Grease a loaf tin.
  2. 2Salt the courgette and leave 15 minutes in a colander. Squeeze out as much water as possible.
  3. 3Beat eggs with oil. Add flour, baking powder, parmesan, chives and pepper. Fold in courgette.
  4. 4Pour into the tin and bake 50-55 minutes until golden and a skewer comes out clean.
  5. 5Cool in the tin for 10 minutes before turning out.
