Forty Clove Chicken

Whole garlic cloves become sweet and spreadable as they roast alongside the chicken. One of the best things you can do with a head of garlic.

Make this in late summer with freshly cured garlic. The cloves will be firmer and more flavourful than stored garlic.

Method

  1. 1Preheat oven to 190°C / 375°F.
  2. 2Season chicken well with salt and pepper. Brown in olive oil in a large oven-safe pan over high heat — 3-4 minutes per side.
  3. 3Scatter garlic cloves and herbs around the chicken. Pour over the wine.
  4. 4Cover tightly with a lid or foil and roast for 60 minutes.
  5. 5Uncover for the final 15 minutes to crisp the skin.
  6. 6Serve with crusty bread to spread the roasted garlic.
