Method

  1. 1Combine all ingredients with your hands until well mixed. Do not overwork the meat.
  2. 2Divide into 8 portions. Shape each around a flat metal skewer, pressing firmly.
  3. 3Grill over high heat for 12-15 minutes, turning every few minutes.
  4. 4Serve with tzatziki, flatbreads and a simple salad.
