Method

  1. 1Get a wok or large pan smoking hot.
  2. 2Add sesame oil, then garlic and ginger. Stir-fry 30 seconds.
  3. 3Add sugar snap peas and spring onions. Stir-fry over maximum heat for 60-90 seconds.
  4. 4Add soy sauce and rice wine. Toss for 30 more seconds.
  5. 5Serve immediately over rice. The peas should still have real crunch.
