Garden Arugula & Peach Salad

Peppery arugula with ripe peaches. One of the most perfect summer salad combinations.

Ingredients

100ggarden arugula
30garugula microgreens (optional)
2 largeripe peaches, sliced
60gprosciutto, torn (optional)
50gburrata or fresh mozzarella
3 tbspgood olive oil
1 tbspwhite balsamic vinegar
to tasteflaky salt and black pepper

Method

1Arrange arugula and microgreens on a plate. Add peach slices and prosciutto.
2Tear burrata over the top.
3Drizzle with oil and vinegar, finish with flaky salt and plenty of pepper.

Tips

The bitterness of arugula is what makes this salad — do not substitute with milder leaves.
