Method

  1. 1Put sliced kale in a large bowl. Add lemon juice, olive oil and salt.
  2. 2Massage vigorously for 3-4 minutes with clean hands until kale is softened, darkened and reduced in volume by half.
  3. 3Leave to rest 10 minutes. Top with cheese and nuts before serving.
