Okra pods lignify fast: a pod that is tender at 3 inches one morning can be woody two days later. Once a pod over-matures it cannot be reversed, and leaving big pods on the plant also signals it to slow new pod production. Next season Pick every day or two and take pods while they are small, 2 to 4 inches long. If a pod is hard to cut or your nail will not dent the tip, it is too old to eat, so cut it off and compost it so the plant keeps making new pods.Harvest every day or two, not weekly, and pick pods young at 2 to 4 inches. Try not to grow okra or its relatives (cotton, hibiscus) in the same spot more than once every 3 years or so. Moving it around the garden and following it with corn, grasses, or beans helps avoid a buildup of soil pests and disease.
