Pea shoots are baby pea plants that you grow indoors and harvest young, about 10 to 16 days after planting, when they are a few inches tall with curling tendrils. They taste sweet and fresh, like a snap pea, and are more tender and a little taller than tiny microgreens like radish. The big pea seed makes them easy but has one special step: you soak the peas overnight (about 8 to 12 hours) before planting them thickly on a shallow tray of seed-starting mix or a growing mat. Then you cover the tray to keep it dark for a few days while they sprout, move it into the light to green up, and snip them off. There is no outdoor season or weather to worry about, so they grow the same way no matter where you live.Pea shoots are the young seedlings of the garden pea (Pisum sativum), grown indoors as a tall, sweet microgreen and cut at about 4 to 6 inches when the tendrils and first true leaves appear, roughly 10 to 16 days after sowing. Indoors, every week of the year. Most mixes are ready in 10 to 16 days; start a fresh tray every week for a steady supply.

  1. Step 01 Day 0

    Sow

    Plump, swollen peas that have roughly doubled in size after soaking, spread in an even, crowded layer across the surface. The mix should be damp but with no standing water.Fully imbibed, swollen seed in a dense even layer on moist, well-drained medium.

    From plant Soak the peas in water for about 8 to 12 hours (overnight), rinse them once or twice, then drain. Scatter them thickly and evenly over damp growing medium, close to a full single layer.     The peas split and push out thick white roots, then pale, sturdy shoots that begin to lift the cover. A little white fuzz right at the seeds is usually harmless root hairs, not mold, if it disappears when you mist.Radicles emerge and thick blanched shoots lift the weighted cover.     From plant Keep the covered tray in the dark for about three days. The darkness makes the shoots grow taller and more even before you give them light. The dark stretch lengthens and evens the stems before greening; peas need the weight longer than small seeds to shed their seed coats and stand up.

You do not need to worry about soil pH for pea shoots. The mixes and mats sold for microgreens are already fine as is.pH is not a practical lever for a single short indoor cycle on a soilless medium; standard seed-starting mixes and coir sit in a workable range and need no adjustment for pea shoots.

You do not need to feed pea shoots. The big pea seed carries plenty of food to reach harvest, and adding fertilizer just invites algae and odd flavors.Pea shoots are harvested while still living on the large seed's own food reserves, so no fertilizer is needed for a single cycle on an inert medium or seed-starting mix. Added nutrients mainly raise the risk of algae and off-flavors on a dense, wet planting.

Recommended varieties

The cheapest and easiest choice for pea shoots is whole (not split) dried field peas, sold as dun, speckled, or green peas; they taste sweet and grow just like the pricier garden-pea seed. Two things matter most: soak the seeds for about 8 to 12 hours (overnight) before planting, and use fresh seed sold for sprouting or eating. Do not use farm seed treated with fungicide, which is colored and not safe to eat.For pea shoots, buy inexpensive whole (not split) dun, speckled, or green field pea seed rather than pricey shelling-pea seed; all taste sweet and grow the same way. Whatever the type, the two rules are: presoak the large seed about 8 to 12 hours (overnight) before sowing, and use fresh, untreated, food-grade seed. Always confirm seed is untreated and sold for sprouting or food, since some agricultural pea seed is treated with fungicide and is not safe to eat.

Dun (field) pea
The workhorse for shoots: an inexpensive brown field pea, sweet and tender. Presoak about 8 to 12 hours; sow heavily. Much cheaper than shelling-pea seed.
Speckled pea
A speckled field/forage pea, similar in flavor and price to dun pea; vigorous and reliable for a dense tray. Presoak about 8 to 12 hours.
Green field pea
A green-cotyledon field pea (Canadian or spring types); slightly sweeter look, same handling. Presoak about 8 to 12 hours; sow heavily.
Dwarf types (Green Arrow and similar)
Standard shelling and dwarf garden peas grow fine as shoots but cost more per pound; use them if that is the seed you have. Presoak about 8 to 12 hours.
Snow / snap pea types
Edible-pod varieties also make good, sweet shoots; more expensive as microgreen seed. Presoak about 8 to 12 hours.

Storing your harvest

Room temp
Do not leave cut pea shoots out on the counter. They go limp fast, so put them in the fridge right after cutting.Do not hold cut pea shoots at room temperature; they wilt within hours. Refrigerate promptly after cutting.
Fridge
Keep cut pea shoots in the fridge in a container with a paper towel to absorb extra moisture. They are one of the tougher microgreens and can last about 1 to 2 weeks.Refrigerate dry in a vented container lined with a paper towel. Pea shoots are among the sturdier microgreens and hold roughly 1 to 2 weeks when kept cool and dry. Harvest only what you will use soon.
Freezer

A thick layer of soaked pea seeds holds a lot of water, so it molds easily if the air is still.Soil-borne fungi (Rhizoctonia, Botrytis, and others) rot seedlings at the soil line under wet, crowded, still conditions, often alongside fuzzy white or gray surface mold.
