A peach is a fruit tree that drops its leaves each winter and gives you fruit you can let ripen right on the branch, which is where peaches taste their best. One tree fruits on its own, so you do not need a second one to get peaches. Peaches do take steady work, though: you prune the tree every winter into an open vase shape, spray on a schedule to keep fruit diseases and bugs in check, thin off the extra little fruit so the rest grow big, and plant where late spring frosts are less likely to settle. Peaches also need a cold-enough winter to wake up and bloom evenly, so you pick a variety that fits your area. With that care, a backyard peach gives you fruit far better than the store. Peach is a deciduous stone-fruit tree (Prunus persica) prized for fruit that ripens best tree-ripened in the home garden, where it can hang to full flavor rather than being picked firm for shipping. It is self-fertile, so a single tree bears, but it asks for real commitment: an annual dormant pruning to an open-center vase, a disciplined spray program against brown rot and insects, early fruit thinning, and a planting site chosen to dodge late-frost pockets. A peach also needs enough winter chill to break dormancy evenly, so variety choice is matched to your winters. Given that care, a backyard tree rewards you with fruit grocery shelves cannot match.

Northern Tier, Zone 7. Winters bank about 700 to 1200 chill hours; these varieties need about 200 to 1050 chill hours. Zone 7 is excellent for peaches. Peach trees need enough cold winter hours, called chill hours, before they will bloom properly in spring. Different varieties need different amounts. If your winters are mild, choose a low-chill variety; if your winters are cold, you can grow almost any variety. Planting a high-chill variety where winters are warm usually means lots of leaves and very few peaches.Peaches need a stretch of winter cold, counted as chill hours (hours between 32°F and 45°F), to break dormancy and bloom evenly. The requirement is set by the variety, not the species: the cultivars here span about 400 chill hours (Florida King, a low-chill type) to 1,050 (Contender, a high-chill type). Match the variety to the chill your winters actually bank. Too few chill hours and the blossoms drop without setting fruit; warm winter days above about 65°F can subtract from the running total.
Most peaches are self-fruitful: a single tree sets a full crop with its own pollen, so you don’t need a second variety to get fruit. Bees still move the pollen from blossom to blossom, so strong pollinator activity through bloom is what drives a heavy set.
