Pickling cucumbers do not keep long at room temperature, just a day or two. Use them soon or put them in the fridge, but not the coldest part. For the crispest pickles, use them the same day you pick.Pickling cucumbers are tender and short-lived off the vine. At room temperature they keep only a day or two before softening, so brine or refrigerate them promptly, with the caveat that cucumbers are chilling-sensitive and do not love a very cold fridge either. For crisp pickles, process the fruit within a day of picking.
Fridge
Keep pickling cucumbers in the fridge for about a week, in the warmer crisper drawer rather than the coldest spot, since too-cold storage causes soft, pitted spots. Keep them away from apples and tomatoes, which make them go bad faster.Stored in the warmest part of the refrigerator, ideally around 45 to 50°F at high humidity, pickling cucumbers keep about a week.
