Sweet Potato

Not sure what soil you have? Grab a small handful of damp soil from your garden bed and squeeze it. If it crumbles apart easily, it's sandy. If it holds together but breaks when you poke it, it's loam (what most vegetables want). If it stays in a hard, slippery ball, it's clay.

Sweet potatoes like it slightly acidic, about 5.8 to 6.5, which is close to what most vegetables want. They are not fussy and will grow from about 5.0 up to nearly neutral, so you rarely need to change your soil much. A cheap soil test from your local extension office tells you your number, and if your soil is very alkaline, mixing in compost helps. Plant your sweet potato slips once all frost is past and the soil has warmed to about 65°F, usually a few weeks after your last frost. Set them 3 to 4 inches deep and about a foot apart on ridges or mounds.

Sweet potato slips droop for the first few days, which is normal, then perk up as they root. Keep the soil damp for the first week or two, and replace any slip that does not recover.

As the vines spread and cover the ground, keep weeds down until they take over, and feed only a little, with a low-nitrogen fertilizer. Too much nitrogen now grows leaves instead of sweet potatoes.
