G-pa's Gourmet Mac & Cheese is more than just a comfort dish -- it's a tradition that's been passed down through generations of our family. I grew up eating this at nearly every gathering, and it quickly became the dish everyone looked forward to most. My grandpa had a way of turning something simple into something unforgettable. What makes his recipe special is the subtle blend of spices that elevate it beyond your typical mac and cheese. The warmth of nutmeg and the slight kick of cayenne pepper create a depth of flavor you don't expect, but instantly love. Combined with rich sharp cheddar and a creamy, homemade sauce, every bite is nostalgic, comforting, and just a little bit unique. What you'll need
How it comes together
Preheat oven to 350°F.
Bring 4 cups of water to a boil in a saucepan. Add macaroni and cook for about 10 minutes, or until tender. Drain and set aside.
In a separate saucepan or Dutch oven, melt butter completely. Slowly mix in flour to create a roux. Cook for about 3 minutes, stirring constantly to prevent burning.
Add milk, cheese, and spices to the roux. Stir until the cheese is fully melted and the sauce is smooth.
Mix in the cooked macaroni.
Transfer to a baking dish and bake uncovered for 35-40 minutes, until browned on top.
Optional: mix in baked chicken breast (shredded or chopped) or add cooked, chopped bacon.
