What you'll need

Serves 8
  • 2 medium cucumbers, thinly sliced
  • 2 tsp salt
  • 1/2 cup white wine or rice vinegar
  • 1 tsp sugar
  • 1 tsp dill seeds or fresh dill
  • 1/2 tsp black pepper

How it comes together

Method

  1. Toss sliced cucumbers with salt in a colander. Let sit 10 minutes to draw out water.

  2. Rinse and pat dry.

  3. Whisk together vinegar, sugar, dill and pepper until sugar dissolves.

  4. Combine with cucumbers and let sit at least 15 minutes before eating. Better after an hour.

Tips

  • A mandoline gives more even, thinner slices, but a sharp knife works fine.
