This only works in peak summer when both arugula and peaches are at their best.

What you'll need

Ingredients

Serves 2
  • 3 1/2 oz garden arugula
  • 1 oz arugula microgreens (optional)
  • 2 large ripe peaches, sliced
  • 2 oz prosciutto, torn (optional)
  • 2 oz burrata or fresh mozzarella
  • 3 tbsp good olive oil
  • 1 tbsp white balsamic vinegar
  • to taste flaky salt and black pepper

How it comes together

Method

  1. Arrange arugula and microgreens on a plate. Add peach slices and prosciutto.

  2. Tear burrata over the top.

  3. Drizzle with oil and vinegar, finish with flaky salt and plenty of pepper.

Tips

  • The bitterness of arugula is what makes this salad. Do not substitute with milder leaves.
