Garden Caprese Skewers

The classic combination of tomato, mozzarella and basil on a skewer. No cooking required: just good tomatoes.

Only make this when you have truly ripe tomatoes. Out of season it is a completely different dish.

What you'll need

Serves 6
  • 10 oz cherry tomatoes
  • 9 oz fresh mozzarella, torn into pieces
  • large handful fresh basil leaves
  • 3 tbsp good olive oil
  • 1 tbsp balsamic glaze
  • to taste flaky sea salt and black pepper

How it comes together

Method

  1. Thread tomatoes, mozzarella and basil onto small skewers, alternating as you go.

  2. Arrange on a plate and drizzle with olive oil and balsamic glaze.

  3. Finish with a generous pinch of flaky salt and black pepper. Serve immediately.

Tips

  • Let the mozzarella come to room temperature before serving. Cold mozzarella has very little flavor.
