Garden Herb Omelette

A proper French omelette with chives, basil and a few cherry tomatoes. The simplest possible breakfast with garden ingredients.

Chives grow year-round. Make this whenever you have fresh herbs.

What you'll need

Ingredients

  • 3 eggs
  • 2 tbsp fresh chives, snipped
  • handful fresh basil leaves
  • 6 cherry tomatoes, halved
  • 1 tbsp butter
  • to taste salt and black pepper

How it comes together

Method

  1. Beat eggs well with a fork. Season with salt.

  2. Heat butter in a non-stick pan over medium-high heat until foaming.

  3. Add eggs. Stir gently with a spatula for 30 seconds, then leave to set at the edges.

  4. Scatter chives and basil over half the omelette. Add tomatoes.

  5. Fold in half and slide onto a plate. Should still be slightly soft in the center.

Tips

  • A proper omelette is pale yellow outside and slightly runny inside. If it is brown, the pan was too hot.
