What you'll need
How it comes together
Beat eggs well with a fork. Season with salt.
Heat butter in a non-stick pan over medium-high heat until foaming.
Add eggs. Stir gently with a spatula for 30 seconds, then leave to set at the edges.
Scatter chives and basil over half the omelette. Add tomatoes.
Fold in half and slide onto a plate. Should still be slightly soft in the center.
