What you'll need

Ingredients

Serves 8
  • large bunch fresh mint, leaves only
  • 1 tbsp superfine sugar
  • 2 tbsp boiling water
  • 3 tbsp white wine or cider vinegar
  • pinch salt

How it comes together

Method

  1. Finely chop the mint leaves.

  2. Dissolve sugar in the boiling water. Add chopped mint, vinegar and salt.

  3. Stir and leave to stand 10 minutes before serving. Taste and adjust vinegar or sugar.
