What you'll need

Ingredients

  • for the pastry:
  • 1 1/2 cups all-purpose flour
  • 9 tbsp cold butter, cubed
  • 2 tbsp superfine sugar
  • 3-4 tbsp ice cold water
  • for the filling:
  • 1 lb fresh strawberries, hulled
  • 2 tbsp sugar
  • 1 tbsp cornstarch
  • 1 egg, beaten, for glazing

How it comes together

Method

  1. Make pastry: combine flour, sugar and butter. Rub until the mixture resembles coarse breadcrumbs. Add water a tablespoon at a time until it just comes together. Wrap and chill 30 minutes.

  2. Preheat oven to 400°F.

  3. Toss strawberries with sugar and cornstarch.

  4. Roll pastry into a rough circle on parchment paper, about 12 inches. Pile strawberries in the center leaving a 2 inch border.

  5. Fold the pastry edges up over the fruit, pleating as you go. Brush pastry with egg.

  6. Bake 35-40 minutes until pastry is deep golden and fruit is bubbling.

Tips

  • The rough, imperfect look is correct. Galettes are meant to look like they were made by someone who could not be bothered with a tart tin.
