Strawberry Jam

Homemade strawberry jam with two ingredients. The flavor of real jam made with just-picked fruit is something else entirely.

Make this when strawberries are at peak. Overripe fruit makes better jam than underripe.

What you'll need

Ingredients

  • 2 lb fresh strawberries, hulled
  • 3 3/4 cups jam sugar (with added pectin)
  • juice of 1 lemon

How it comes together

Method

  1. Combine strawberries, sugar and lemon juice in a large heavy pan. Let sit 30 minutes for the sugar to draw out juices.

  2. Bring to a boil over high heat, stirring to dissolve sugar. Skim off any foam.

  3. Boil hard for 10-15 minutes until setting point is reached. Test by placing a teaspoon on a cold plate: it should wrinkle when pushed.

  4. Pour into sterilized jars and seal immediately. Process in a water bath for 10 minutes for longer shelf life.

Tips

  • Sterilize jars by washing in hot soapy water, rinsing, then placing in a 250°F oven for 15 minutes.
