Whole garlic cloves become sweet and spreadable as they roast alongside the chicken. One of the best things you can do with a head of garlic.
Make this in late summer with freshly cured garlic. The cloves will be firmer and more flavorful than stored garlic.
What you'll need
How it comes together
Preheat oven to 375°F.
Season chicken well with salt and pepper. Brown in olive oil in a large oven-safe pan over high heat, 3-4 minutes per side.
Scatter garlic cloves and herbs around the chicken. Pour over the wine.
Cover tightly with a lid or foil and roast for 60 minutes.
Uncover for the final 15 minutes to crisp the skin.
Serve with crusty bread to spread the roasted garlic.
