Forty Clove Chicken

Whole garlic cloves become sweet and spreadable as they roast alongside the chicken. One of the best things you can do with a head of garlic.

Make this in late summer with freshly cured garlic. The cloves will be firmer and more flavorful than stored garlic.

What you'll need

  • 3 lb chicken thighs and drumsticks
  • 40 cloves garlic (about 3-4 heads), unpeeled
  • 6 sprigs fresh thyme
  • 3 sprigs fresh rosemary
  • 4 tbsp olive oil
  • 1/2 cup dry white wine
  • to taste salt and black pepper

How it comes together

Method

  1. Preheat oven to 375°F.

  2. Season chicken well with salt and pepper. Brown in olive oil in a large oven-safe pan over high heat, 3-4 minutes per side.

  3. Scatter garlic cloves and herbs around the chicken. Pour over the wine.

  4. Cover tightly with a lid or foil and roast for 60 minutes.

  5. Uncover for the final 15 minutes to crisp the skin.

  6. Serve with crusty bread to spread the roasted garlic.

Tips

  • Squeeze the garlic cloves out of their skins onto bread as you eat. They will be silky and sweet.
