Garden Herb Salt

Mix fresh garden herbs with coarse salt and dry them. One of the best gifts from a garden, and it keeps for months.

Make this in late summer when herbs are at peak and most abundant before the first frosts.

What you'll need

Ingredients

Serves 20
  • 1 oz fresh rosemary leaves
  • 3/4 oz fresh thyme leaves
  • 3/4 oz fresh sage leaves
  • 3/4 cup coarse sea salt
  • optional lemon zest, chili, garlic

How it comes together

Method

  1. Pulse herbs and salt together in a food processor until finely mixed. Do not over-process.

  2. Spread on a baking sheet and leave to dry at room temperature for 24 hours, or dry in the oven at 120°F for 2 hours.

  3. Once completely dry, store in a jar. It keeps for 3-6 months.

Tips

  • Label with the herbs and date. Rosemary-lemon salt on roasted chicken is exceptional.
