How it comes together
Make the salsa: combine all salsa ingredients, season with salt and let sit at room temperature for at least 20 minutes.
Season chicken with salt, pepper and a little oil. Grill over medium-high heat until cooked through, 6-8 minutes per side for breasts.
Rest 5 minutes, then spoon the salsa generously over. Serve immediately.
