What you'll need

Serves 4
  • 4 medium zucchini, sliced lengthwise into 1/4 inch strips
  • 3 1/2 oz feta, crumbled
  • handful fresh mint leaves
  • 3 tbsp olive oil
  • zest of 1 lemon
  • to taste salt and black pepper

How it comes together

Method

  1. Brush zucchini slices with oil and season well.

  2. Cook on a hot grill pan or under the broiler for 2-3 minutes per side until charred and tender.

  3. Arrange on a plate, scatter over feta and mint, finish with lemon zest and a drizzle of oil.

Tips

  • The broiler must be very hot for proper char. A tepid broiler produces steamed zucchini, which is a different, worse thing.
