Zucchini Fritters with Yogurt

Make these when zucchini are coming thick and fast in July and August.

What you'll need

Ingredients

Serves 4
  • 1 lb zucchini (about 3 medium)
  • 1 tsp salt
  • 2 eggs
  • 1/2 cup all-purpose flour
  • 2 oz feta, crumbled
  • 2 tbsp fresh mint, chopped
  • 2 tbsp chives, chopped
  • oil for frying

How it comes together

Method

  1. Grate the zucchini, toss with salt and leave in a colander for 15 minutes. Squeeze out as much water as possible: this step is essential.

  2. Beat the eggs, add flour, feta, mint and chives. Fold in the squeezed zucchini.

  3. Heat oil in a frying pan over medium heat. Drop heaped tablespoons of the mixture and flatten slightly.

  4. Cook 3 minutes per side until golden. Keep warm in a low oven while you cook the rest.

  5. Serve with yogurt and a squeeze of lemon.

Tips

  • The more water you squeeze out, the crispier the fritters. Do not rush this step.
