Make this during the August tomato glut. A pot of soup in the freezer means summer flavors all winter.

What you'll need

Ingredients

  • 3 lb ripe beefsteak tomatoes, halved
  • 1 head garlic, cloves separated, unpeeled
  • 1 large onion, quartered
  • 5 tbsp olive oil
  • 2 1/2 cups vegetable or chicken stock
  • large handful fresh basil
  • to taste salt, pepper, sugar

How it comes together

Method

  1. Preheat oven to 400°F.

  2. Place tomatoes cut-side up on a large baking sheet. Add garlic and onion. Drizzle generously with oil, season with salt and a little sugar.

  3. Roast 45 minutes until caramelized and slightly charred at the edges.

  4. Squeeze garlic from skins. Transfer everything to a blender with the stock and basil.

  5. Blend until smooth. Taste and season. Reheat gently to serve.

  • The sugar is not optional. It balances the acidity that develops during roasting.
