What you'll need

  • 10 oz sugar snap peas, strings removed
  • 4 spring onions, cut into 1 1/2 inch lengths
  • 3 cloves garlic, thinly sliced
  • 1 inch piece fresh ginger, grated
  • 2 tbsp sesame oil
  • 2 tbsp soy sauce
  • 1 tbsp rice wine or dry sherry
  • to serve rice, sesame seeds

How it comes together

Method

  1. Get a wok or large pan smoking hot.

  2. Add sesame oil, then garlic and ginger. Stir-fry 30 seconds.

  3. Add sugar snap peas and spring onions. Stir-fry over maximum heat for 60-90 seconds.

  4. Add soy sauce and rice wine. Toss for 30 more seconds.

  5. Serve immediately over rice. The peas should still have real crunch.

Tips

  • The key is ferocious heat and minimal time. Overcooked sugar snap peas are a tragedy.
