Best in autumn when carrots have had a frost. It converts starch to sugar and deepens the flavor.

What you'll need

Ingredients

Serves 4
  • 1 1/2 lb carrots, peeled and roughly chopped
  • 1 large onion, roughly chopped
  • 1 inch piece fresh ginger, grated
  • 2 cloves garlic
  • 4 cups vegetable stock
  • 2 tbsp olive oil
  • to taste salt, pepper, lemon juice

How it comes together

Method

  1. Heat oil in a large pan. Soften onion over medium heat for 8 minutes. Add garlic and ginger, cook 2 more minutes.

  2. Add carrots and stock. Bring to a boil, reduce heat and simmer 20-25 minutes until carrots are completely soft.

  3. Blend until smooth. Season generously with salt, pepper and lemon juice.

  4. Serve with a drizzle of good oil and a pinch of chili if you like.
