Kale from autumn onwards has the best flavor. Light frost sweetens it.

What you'll need

  • 7 oz kale, stems removed, torn into pieces
  • 2 tbsp olive oil
  • 1/2 tsp flaky salt
  • optional nutritional yeast, smoked paprika, chili

How it comes together

Method

  1. Preheat oven to 300°F.

  2. Wash and thoroughly dry the kale. Any moisture and it steams instead of crisps.

  3. Toss with oil, making sure every leaf is lightly coated. Spread on baking sheets in a single layer.

  4. Bake 15-20 minutes, checking every 5 minutes. They go from almost done to burnt quickly.

  5. Season with salt immediately and eat within an hour. They lose their crunch quickly.

Tips

  • The drying step is the most important. Spin in a salad spinner then lay on a clean towel.
