What you'll need

  • 9 oz kale, stems removed, finely sliced
  • 3 tbsp lemon juice
  • 3 tbsp good olive oil
  • 1/2 tsp salt
  • 1/2 cup parmesan or pecorino, shaved
  • 1/4 cup toasted pine nuts or almonds

How it comes together

Method

  1. Put sliced kale in a large bowl. Add lemon juice, olive oil and salt.

  2. Massage vigorously for 3-4 minutes with clean hands until kale is softened, darkened and reduced in volume by half.

  3. Leave to rest 10 minutes. Top with cheese and nuts before serving.

  • This is one of the few salads that genuinely improves overnight. Make it ahead.
