How it comes together
Put sliced kale in a large bowl. Add lemon juice, olive oil and salt.
Massage vigorously for 3-4 minutes with clean hands until kale is softened, darkened and reduced in volume by half.
Leave to rest 10 minutes. Top with cheese and nuts before serving.
